Egg White Oatmeal Recipe

I decided to change things up today and try something new for breakfast, Egg White Oatmeal. I like mixing things up for my meals and I felt like I needed something a little extra today. I stumbled upon the idea of adding Egg Whites to my oatmeal for protein instead of a powdered protein source and I decided to give it a try!

This is my new favorite way to eat oatmeal.

Egg White Oatmeal Recipe Ingredients:

  • 1/2 Cup of dry oatmeal ( I used McCanns today, but I use Bob’s RedMill Gluten Free as well)
  • 3/4 Cup of water
  • 40g of blueberries
  • 40g of banana
  • 1Tbps of Flax Meal
  • 1/4 Cup Unsweetend Almond milk
  • 1/3 Cup of Kirkland Egg Whites (about 2 eggs worth of whites)

Cooking Instructions:

  • Put water into a pot and bring to a boil on high heat (about 5-6 minutes)
  • Bring to a medium heat, stir in Oatmeal and cook until almost all the water is dissolved (about 3 minutes)
  • Stir in egg whites and continue stirring until a fluffy consistency, its important to keep stirring (about 1 minute) so the egg whites don’t get cooked in “chunks”.
  • Stir in Blueberries, Banana, Flax and Almond Milk (about 30 seconds)
  • Put in a bowl and enjoy.

Nutrition: 308 calories, 47 carbs, 7 fat, 16 protein, 193 sodium and 11 sugars

Focus T25 Day 15 – Abs & Total Body

Focus T25 Day 15 – Abs and Total Body today. I kicked off the workout at 5:42am this morning and decided to-do the Ab workout first. I still think this is a killer ab workout and I love it! I am going to-do Total Body later today or tomorrow depending on my travel schedule. I did have time this morning to get a short run in prior to kicking off my daily meetings.

Focus T25 Day 13 – Lower Focus

I’m posting this a day later than I would have hoped and it’ll be my last post on Focus T25 for about a week. Yesterday, while doing lunges about 13 minutes into the workout my upper right leg/hip/groin muscle popped a few times. I’ve been pushing myself pretty hard and even through I stretch I need to let this rest up. I can tell it’s injured, I have full use of my leg etc. However, there is a nagging dull pain around the area of the “pops”.

I’ll take the next week off from cardio and focus on strength training and core and then pickup T25 in a week after my leg is feeling better.

BUMMED OUT!!!

My first real injury in 12 months

I’m bummed, totally and utterly bummed. I was doing Focus T25 – Lower Focus this morning and as I was going down to-do a lunge I heard a pop, snap and I fell to the floor. It was towards the inside of my right leg. Now, I have a warm uncomfortable sensation. It looks like I’ll be taking a few days off from T25 and resting my lower body and praying I didn’t do any major damage.

The good news, I can still walk and stretch. It’s just a little uncomfortable.

Chocolate Breakfast Smoothie – Recipe

Today’s breakfast smoothie, simply named “Chocolate Breakfast Smoothie” consisted of the following ingredients which made a really flavorful breakfast.

Chocolate Breakfast Smoothie

  • 1x Scoop Protien Powder
  • 1oz of Organic Spinach fresh
  • 1Tbsp of Flax
  • 16 Raspberries
  • 10oz water, 5 ice cubes
  • Blended until smooth (about 30 seconds), I use a VitaMix Belnder

Egg White Spinach Omelet Recipe

I’m a huge fan of Omelets. Egg Whites are my favorite and when I’m eating at home I get them from Costco in bulk, it’s quick and easy. Today’s omelet creation consisted of the following:

Egg White Spinach Omelet Recipe

  • 3/4 Cup Egg Whites (roughly 4 eggs)
  • 1oz Spinach
  • 38g Avocado Cubed
  • 2Tbps of Jacks Special Salsa
  • 2g of Kerry Gold Butter (a thin slice)

Totals: Calories 171, Carbs 6, Fat 5, Protein 22g, Sodium 449g, Sugar 1g.
